Culinary workforce training
Kitchen skills built for employment.
A structured, cohort-based introduction to commercial kitchen work: knife skills, stations, sanitation, volume production and the pace of real service.
Fresh Chef Foundation
Fresh Chef Foundation uses culinary education, hospitality, entrepreneurship and access to create pathways to opportunity.

Fresh Chef Foundation exists at the intersection of food, education, entrepreneurship and economic opportunity.
We believe culinary and hospitality skills can become vehicles for employment, ownership, confidence and long-term economic mobility. A kitchen is one of the few rooms where a person can walk in with almost nothing and walk out with a trade.
Every program we run sits on at least one of these. Most sit on all four.
01
Fundamentals, food safety and kitchen literacy taught the way professional kitchens actually run.
02
Service, guest experience and the soft skills that decide whether a room works.
03
Costing, pricing, margin and ownership — the business behind the plate.
04
Placement, mentorship and career pathways that continue after the last class.
“Food is one of the few industries where talent can become income almost immediately.”
Teachable, measurable, portable. It travels with a person for life.
Kitchens hire on ability. Competence is visible within a shift.
A menu can become a company with less capital than most industries require.
Food is how communities gather, negotiate and celebrate.
Line to lead to operator to owner — a ladder that still exists.
Modular, cohort-based and built to be added to. Each program below can run independently or stack into a full pathway.
01
Kitchen skills built for employment.
A structured, cohort-based introduction to commercial kitchen work: knife skills, stations, sanitation, volume production and the pace of real service.
02
Good food, early.
Hands-on cooking and nutrition programming for young people — building food confidence, literacy and access alongside Fresh Future Kitchen.
03
From recipe to revenue.
Menu costing, pricing, permitting, packaging and the operating math behind a small food business — taught by people who have run one.
04
Learning inside a working café.
Participants work live service at FRESH GASTRO — order, prep, cook, serve — so training ends in experience, not a certificate alone.
05
Feeding the block we're on.
Community meals, food access programming and neighbourhood partnerships that keep the work accountable to the people around it.
06
Someone to call after the program ends.
Chef and operator mentorship, interview preparation, employer introductions and long-term career navigation.
Urban League of Essex County
We didn't want to parachute a program into a neighbourhood. The Urban League of Essex County has spent decades building trust, workforce infrastructure and community presence in Newark. Our collaboration puts culinary workforce development, community food programming and FRESH GASTRO inside that existing ecosystem — so training is connected to the services, employers and families already there.
We publish verified figures only. Metrics appear here as programs are audited and confirmed.

Chef Ameer Natson
“I've spent my career using food to feed people. The Foundation exists because food can also be used to employ them, train them and hand them ownership.”
Chef, author and entrepreneur Ameer Natson founded Fresh Chef Foundation on the belief that the food industry should be a door, not a dead end — and that the people closest to the work deserve the first shot at the opportunity it creates.
