Three components, one sauce, no garnish that isn't load-bearing. The dishes drawing the most attention this season are defined by subtraction — a response to both cost and confidence.

Leaving things off requires better product and better cooking. There is nowhere to hide behind a foam.

Diners have learned to read it. A spare plate now signals conviction rather than austerity, which is a meaningful shift in how value is communicated.
